Crust Preparation

In a large mixing bowl, combine all-purpose flour, granulated sugar, and salt. Mix well.

Cut the unsalted butter into small cubes and add to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Gradually add ice water, one tablespoon at a time, mixing until the dough holds together. Do not overmix.

Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

Preheat your oven to 350°F (175°C).

Mix Filling Ingredients

In a large bowl, combine ricotta cheese, powdered sugar, vanilla extract, eggs, and lemon zest. Mix until smooth and well combined.
