Bourbon Sauce

Prepare the Bourbon Sauce
In a medium saucepan over medium heat, combine the bourbon, brown sugar, and unsalted butter. Stir until the butter is melted and the sugar is dissolved.

Simmer the Sauce
Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 10 minutes, stirring occasionally, until it thickens slightly. Remove from heat and stir in the vanilla extract. Set aside to cool.
Candied Bacon

Preheat the Oven
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Prepare the Bacon
In a bowl, mix the brown sugar, maple syrup, and black pepper until well combined. Dip each strip of bacon in the mixture, ensuring both sides are coated.

Bake the Bacon
Place the coated bacon strips on the prepared baking sheet in a single layer. Bake in the preheated oven for about 15-20 minutes, or until the bacon is crispy and caramelized. Keep an eye on it to prevent burning.

Once done, remove the bacon from the oven and let it cool on a wire rack. Once cooled, chop into small bits.
