Strip Loin

Prepare the Steak
Season the strip loin steaks with salt and black pepper on both sides.

Rest the Steak
Remove the steaks from the skillet and let them rest for at least 5 minutes before slicing.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter, heavy cream, egg yolks, nutmeg, and salt. Mash until smooth and creamy.

Pipe the Potatoes
Transfer the potato mixture to a piping bag and pipe into decorative shapes on a baking sheet.

Bake the Potatoes
Preheat the oven to 400°F (200°C) and bake the duchesse potatoes for 15-20 minutes until golden brown.
Red Wine Reduction

Sauté Shallots
In the same skillet used for the steaks, add chopped shallots and sauté for 2-3 minutes until translucent.

Reduce the Sauce
Let the sauce simmer for about 15-20 minutes until it thickens. Season with salt and black pepper.

Finish with Butter
Remove from heat and whisk in butter until melted and the sauce is glossy.
Maple Spiced Brussels Sprouts

Prepare Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half.

Roast the Brussels Sprouts
Spread the Brussels sprouts on a baking sheet and roast in a preheated oven at 400°F (200°C) for 20-25 minutes until tender and caramelized.
