Preparing the Wings

    Clean the Wings

    Rinse the chicken wings under cold water and pat dry with paper towels.

    Season the Wings

    In a large bowl, combine the salt, black pepper, garlic powder, and smoked paprika. Add the wings to the bowl and toss until they are evenly coated with the seasoning.

Smoking the Wings

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C).

    Smoke the Wings

    Place the seasoned wings on the smoker racks and smoke for about 1.5 hours, or until they reach an internal temperature of 165°F (74°C).

Buffalo Sauce Preparation

    Make the Buffalo Sauce

    In a small saucepan, melt the butter over medium heat. Add the hot sauce, garlic powder, and celery salt. Stir until well combined and heated through. Remove from heat.

    Coat the Wings

    Once the wings are done smoking, place them in a large bowl and pour the buffalo sauce over them. Toss to coat evenly.

STL BBQ Sauce Preparation

    Make the STL BBQ Sauce

    In a small bowl, combine the BBQ sauce, apple cider vinegar, honey, and Worcestershire sauce. Mix well until combined.

    Coat the Wings

    If you prefer STL BBQ wings, after smoking, place the wings in a bowl and pour the BBQ sauce over them. Toss to coat evenly.
