Method

Brownie Base

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

    Melt the Butter

    In a saucepan, melt the butter over medium heat. Remove from heat and let cool slightly.

    Mix Sugars and Eggs

    In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Stir until well mixed. Add the eggs and vanilla extract, beating until smooth.

    Combine Dry Ingredients

    In a separate bowl, whisk together the flour, cocoa powder, salt, and red food coloring.

    Combine Wet and Dry Mixtures

    Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.

    Bake the Brownies

    Pour the brownie batter into the prepared baking pan and spread evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

    Cool the Brownies

    Remove from the oven and allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Strawberry Sauce

    Prepare the Strawberries

    Wash and hull the fresh strawberries. Cut them into halves or quarters depending on their size.

    Cook the Sauce

    In a saucepan, combine the strawberries, granulated sugar, and lemon juice. Cook over medium heat until the strawberries break down and the mixture thickens, about 10-15 minutes.

    Cool the Sauce

    Remove from heat and let the sauce cool. Blend if you prefer a smoother consistency.

Cream Cheese Mousse

    Beat Cream Cheese

    In a medium bowl, beat the cream cheese until smooth using a hand mixer or whisk.

    Add Sugar and Vanilla

    Gradually add powdered sugar and vanilla extract to the cream cheese, mixing until combined.

    Whip the Cream

    In a separate bowl, whip the heavy cream until stiff peaks form.

    Fold the Mixtures Together

    Gently fold the whipped cream into the cream cheese mixture until fully combined and fluffy.

    Chill the Mousse

    Transfer the mousse to the fridge to chill for at least 30 minutes before serving.
