Method
Lime Coulis

Prepare the Limes
Juice the limes until you have about 1 cup of lime juice. Remove any seeds.

Cook the Coulis
In a saucepan, combine lime juice, granulated sugar, and water. Heat over medium heat until the sugar is fully dissolved, stirring occasionally.

Cool the Coulis
Remove from heat and let the mixture cool completely. Once cooled, blend until smooth if desired.
Toasted Meringue

Whip the Egg Whites
In a large mixing bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form.

Add Sugar Gradually
Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until stiff peaks form and the meringue is glossy.

Add Vanilla
Gently fold in the vanilla extract.

Toast the Meringue
Spread the meringue over your dessert and use a kitchen torch or broiler to toast the top until golden brown.

Prepare the Mixture
In a large mixing bowl, combine graham cracker crumbs, melted unsalted butter, brown sugar, and salt. Mix until well combined.

Preheat your oven to 350°F (175°C). Spread the mixture evenly on a baking sheet and bake for 10-12 minutes, stirring halfway through, until golden brown.
