Fried Jalapeño Coins

    Prepare the Jalapeños

    Slice the jalapeños into 1/4 inch thick coins. Remove seeds if you want less heat.

    Make the Breading

    In one bowl, mix all-purpose flour, cornmeal, salt, and black pepper. In another bowl, whisk together the egg and milk.

    Coat the Jalapeños

    Dip each jalapeño coin into the egg mixture and then into the flour mixture until fully coated.

    Fry the Jalapeños

    Heat oil in a deep skillet over medium-high heat. Fry the coated jalapeño coins in batches for 2-3 minutes until golden brown. Remove and drain on paper towels.

Chipotle Honey Mayo

    Mix the Ingredients

    In a bowl, combine mayonnaise, honey, chipotle in adobo sauce, and lime juice. Mix well until smooth and set aside.

Assembly

    Prepare the Vegetables

    Wash and chop the lettuce. Slice the tomato into rounds.

    On a serving platter, layer the lettuce, tomato slices, pepper jack cheese, and fried jalapeño coins. Drizzle with chipotle honey mayo before serving.
