Method

Tomato Jam Preparation

    Prepare the Tomatoes

    Wash and chop the ripe tomatoes into small pieces. Remove any stems or blemishes.

    Cook the Onion and Garlic

    Peel and finely chop the onion and garlic cloves. In a large saucepan, heat a tablespoon of olive oil over medium heat and sauté the onion until translucent, about 5 minutes. Add the minced garlic and sauté for another 1-2 minutes.

    Combine Ingredients

    Add the chopped tomatoes, sugar, apple cider vinegar, salt, and black pepper to the saucepan. Stir to combine.

    Simmer the Jam

    Bring the mixture to a boil, then reduce heat to low. Let it simmer uncovered for about 30-40 minutes, stirring occasionally until it thickens to a jam-like consistency.

    Add Fresh Basil

    Once the jam has thickened, stir in the fresh basil leaves and cook for an additional 5 minutes. Remove from heat and allow to cool.

Chevre and Baguette Assembly

    Prepare the Baguette

    Slice the baguette into 1-inch thick slices. You can toast them lightly if desired.

    Spread the Cheese

    Take the chèvre and spread a generous amount on each baguette slice.

    Top with Tomato Jam

    Spoon the prepared tomato jam over the goat cheese on each slice.

    Garnish

    Sprinkle additional fresh basil leaves on top for garnish and drizzle with olive oil if desired.

    Serve

    Arrange the assembled baguette slices on a platter and serve immediately, enjoying the delightful combination of flavors.
