    Prepare the potatoes

    Preheat your oven to 425°F (220°C). Wash and peel the Russet potatoes. Cut them into thin strips to resemble fries, about 1/4 inch thick.

    Season the fries

    In a large bowl, toss the potato strips with olive oil, garlic powder, salt, and black pepper until evenly coated.

    Bake the fries

    Spread the seasoned potato strips in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until they are golden and crispy.

    Add Parmesan

    In the last 5 minutes of baking, sprinkle the grated Parmesan cheese over the fries and return to the oven until the cheese is melted and slightly golden.

Lemon Aioli

    Mix the aioli

    In a medium bowl, combine the mayonnaise, fresh lemon juice, minced garlic, and salt. Stir well until all ingredients are fully blended.

    Garnish the aioli

    Add in the chopped fresh parsley and mix gently to incorporate. Adjust salt to taste.
