Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into even-sized strips, about 1/4 inch thick, to ensure even cooking.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by placing a small piece of potato in the oil; it should sizzle immediately.

Season the Fries
While the fries are still hot, season them with salt, black pepper, and paprika to taste.
Garlic Aioli Sauce

Combine Ingredients
In a medium bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper.

Mix Well
Stir the mixture until all ingredients are well combined. Adjust seasoning if necessary.

Chill the Sauce
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld together.
Spicy Ketchup Sauce

Mix Ingredients
In a small bowl, combine the ketchup, sriracha sauce, honey, and lemon juice.

Stir and Adjust
Stir until smooth, and taste. Adjust the spice level by adding more sriracha if desired.

Transfer the spicy ketchup sauce to a serving dish and set aside for dipping.
