Wash and peel the russet potatoes. Cut them into thin strips to make fries.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips to the hot oil in batches. Fry for 5-7 minutes until golden brown and crispy. Remove and drain on paper towels. Season with salt to taste.

Make the Roux
In a saucepan over medium heat, melt the unsalted butter. Once melted, whisk in the all-purpose flour and cook for 1-2 minutes until slightly golden.

Add Beer and Cheese
Gradually whisk in the pale ale beer, ensuring there are no lumps. Allow it to simmer for 2-3 minutes until slightly thickened. Stir in the shredded sharp cheddar cheese and cream cheese until melted and smooth.

Season the Sauce
Add garlic powder, onion powder, salt, and black pepper. Stir until well combined and remove from heat.

In a pot, combine the shredded brisket, canned diced tomatoes, kidney beans, chili powder, cumin, salt, black pepper, and water.

Simmer the Chili
Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, stirring occasionally.

On a serving plate, layer the crispy fries. Pour the brisket chili over the fries and drizzle with the beer cheese sauce. Top with additional shredded cheddar cheese and chopped green onions.
