Crab Cakes

    Prepare the Mixture

    In a large bowl, combine the crab meat, breadcrumbs, mayonnaise, Dijon mustard, egg, green onions, Old Bay seasoning, salt, and black pepper. Mix gently until just combined.

    Form the Cakes

    Using your hands, form the mixture into patties, about 3 inches in diameter. Place the patties on a plate and refrigerate for at least 30 minutes to firm up.

    Cook the Cakes

    Heat the olive oil in a large skillet over medium heat. Add the crab cakes to the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through.

    Prepare the Ingredients

    Chop the roasted red peppers, garlic, and red onion into small pieces for easy blending.

    Blend the Chutney

    In a blender or food processor, combine the roasted red peppers, garlic, red onion, balsamic vinegar, honey, salt, black pepper, and olive oil. Blend until smooth.

    Taste and Adjust

    Taste the chutney and adjust seasoning if necessary, adding more salt or pepper to your liking.

    Serve the crab cakes warm with the roasted red pepper chutney drizzled on top or on the side.
