Chili Preparation

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped red onion and minced garlic, sautéing until the onion is translucent, approximately 5 minutes.

    Add Meat and Spices

    Stir in the smoked brisket, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for an additional 3 minutes, allowing the spices to toast slightly.

    Combine with Tomatoes and Beans

    Add the diced tomatoes and kidney beans (drained and rinsed) to the pot. Stir to combine all ingredients thoroughly.

    Add Broth and Simmer

    Pour in the beef broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 30 minutes, stirring occasionally.

Serving the Chili

    Prepare the Toppings

    While the chili simmers, prepare the toppings by crumbling the cotija cheese, chopping the fresh cilantro, and having the sour cream and cornbread croutons ready.

    Serve

    Once the chili has finished simmering, taste and adjust seasoning if necessary. Ladle the chili into bowls and top with cotija cheese, cilantro, a dollop of sour cream, and a generous handful of cornbread croutons.
