Pork Marinade

Prepare the Marinade
In a bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, and black pepper. Mix well.

Marinate the Pork
Cut the pork tenderloin into thin slices and add to the marinade. Ensure all pieces are coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Pickled Vegetables

Prepare the Pickling Solution
In a saucepan, combine rice vinegar, sugar, and salt. Heat over medium until the sugar and salt dissolve.

Cooking the Pork and Assembling the Sandwich

Cook the Pork
In a skillet over medium-high heat, add a little oil. Once hot, add the marinated pork slices and cook for 4-5 minutes on each side until cooked through and browned.

Assemble the Sandwich
Slice the baguettes open without cutting all the way through. Spread mayonnaise inside, add cooked pork, pickled vegetables, fresh cilantro, and sliced jalapeños. Close and press down gently.

Serve
Cut the sandwiches in half and serve immediately, or wrap in parchment paper for later.
