Peach Puree Preparation

    Prepare the Peaches

    Wash the fresh peaches thoroughly under running water. Remove the pits and chop the peaches into small pieces.

    Make the Puree

    In a blender, combine the chopped peaches, granulated sugar, and lemon juice. Blend until smooth. If the mixture is too thick, you can add a tablespoon of water to help it blend better.

    Strain the Puree (Optional)

    If you prefer a smoother texture, strain the puree through a fine-mesh sieve to remove the pulp and skins.

Mixing the Bellini

    Prepare the Glasses

    Chill your champagne flutes or glasses in the refrigerator for about 15 minutes before serving.

    Pour the Peach Puree

    Add about 2 ounces of the peach puree to each chilled glass.

    Add the Champagne

    Slowly pour the champagne or sparkling wine over the peach puree, filling the glass to about 3/4 full. The mixture will fizz, so pour gently.
