Method

Cooking Directions

  1. 1

    Sauté the Aromatics

In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

  2. 2

    Make the Roux

Sprinkle the flour over the sautéed onions and garlic, stirring constantly for about 2 minutes until the flour is lightly browned.

  3. 3

    Add Broth

Gradually whisk in the chicken broth, ensuring there are no lumps. Bring the mixture to a simmer.

  4. 4

    Add Cream and Seasoning

Stir in the heavy cream, Old Bay seasoning, salt, and black pepper. Allow the soup to simmer gently for another 10 minutes, stirring occasionally.

  5. 5

    Add Crab Meat

Gently fold in the lump crab meat, taking care not to break it up too much. Simmer for an additional 5 minutes to heat the crab through.

  6. 6

    Serve

Ladle the soup into bowls and garnish with chopped chives before serving.
