    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

    Bake the Crust

    Bake the crust in the preheated oven for about 8-10 minutes, or until lightly golden. Remove from the oven and let it cool while preparing the filling.

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar and continue to beat until well combined. Add sour cream and vanilla extract, mixing until smooth.

    Add Eggs

    Add eggs one at a time, mixing on low speed after each addition until just combined. Avoid overmixing.

    Bake the Cheesecake

    Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside with the door ajar for about 1 hour.

    Cool and Chill

    Remove the cheesecake from the oven and allow it to cool completely at room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
