Preparation Steps

    Fry the Wontons

    Heat vegetable oil in a deep pan over medium heat. Cut the wonton wrappers into triangles and fry them until golden brown and crispy. Remove and drain on paper towels.

    Prepare the Slaw

    In a mixing bowl, shred the cabbage and carrot. Mince the garlic and grate the ginger. Combine all slaw ingredients and mix well. Season with salt and pepper to taste.

    Prep the Ahi Tuna

    Dice the Ahi tuna into small cubes. Season with salt and pepper.

    Chop the Toppings

    Dice the tomato and mango into small pieces.

    Assemble the Nachos

    On a platter, layer the fried wontons, then top with the Ahi tuna, diced tomato, mango, and garlic-ginger slaw. Drizzle with sweet and sour sauce and wasabi aioli, and sprinkle with sesame seeds.
