Cut the Potatoes
Wash and peel the russet potatoes. Cut them into even strips (about 1/4 inch thick) for uniform cooking.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch, which helps them to become crispier.

Dry the Fries
After soaking, drain the fries and pat them dry with a clean kitchen towel to remove moisture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the fries to the hot oil in batches, frying them for about 5-6 minutes or until golden brown and crispy. Remove them with a slotted spoon and place them on paper towels to drain.

Season the Fries
While the fries are still hot, sprinkle them with salt, black pepper, garlic powder, paprika, onion powder, and dried parsley. Toss gently to ensure they are evenly coated.
