Marinate the Chicken
In a bowl, combine buttermilk and hot sauce. Add chicken thighs and let marinate in the refrigerator for at least 1 hour, or overnight for best results.

Fry the Chicken
Heat vegetable oil in a frying pan over medium-high heat. Remove chicken from marinade, letting excess drip off, and coat in the flour mixture. Fry the chicken for about 5-7 minutes on each side or until golden brown and cooked through. Drain on paper towels.

Cook the Mac and Cheese
In a pot, bring salted water to a boil and cook macaroni until al dente. In another pot, melt butter over medium heat, whisk in flour, and gradually add milk. Cook until thickened, then stir in cheese until melted. Combine with drained macaroni, and season with salt and pepper.

Assemble the Sandwich
Toast the burger buns if desired. Place the fried chicken on the bottom half of the bun, add pickles, and top with the other half of the bun.

Serve the hot chicken sandwich with a side of mac and cheese.
