    Make the Sticky Date Pudding

    Preheat the oven to 180°C (350°F). Grease a baking dish.

    In a bowl, combine the pitted dates and boiling water. Stir in baking soda and set aside for 10 minutes.

    In another bowl, cream the butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.

    Mix in the date mixture, then fold in the flour and baking powder along with the vanilla extract.

    Pour the batter into the prepared dish and bake for 30-35 minutes or until a toothpick comes out clean.

    Make the Toffee Sauce

    In a saucepan, melt the butter over medium heat.

    Add the brown sugar and heavy cream, stirring continuously until the mixture is smooth and begins to thicken. Remove from heat.

    Make the Peanut Crumble

    In a frying pan over low heat, melt the butter.

    Add the peanuts and brown sugar, stirring until the mixture is golden and crumbly. Let it cool.

    Serve

    Slice the sticky date pudding, serve warm with a scoop of vanilla ice cream, drizzle with toffee sauce, and sprinkle with peanut crumble.
