    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

    Combine Wet Ingredients

    In another bowl, mix the vegetable oil, eggs, and vanilla extract until well combined.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients, and stir until just combined. Fold in the grated carrots and chopped walnuts if using.

    Bake the Cake

    Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

    Cool the Cakes

    Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

    Prepare Cream Cheese Frosting

    While the cakes are cooling, prepare the cream cheese frosting by beating together 8 oz cream cheese, 1/2 cup unsalted butter, 4 cups powdered sugar, and 1 tsp vanilla extract until smooth.

    Frost the Cake

    Once the cakes are completely cooled, place one layer on a serving plate, spread a layer of frosting on top, then place the second layer and frost the top and sides.
