Preparation and Cooking

    Make the Pasta Dough

    In a large bowl, combine flour and a pinch of salt. Create a well in the center and add the eggs. Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Cheese Filling

    In a bowl, mix together ricotta, mozzarella, parmesan, salt, and pepper until well combined. Set aside.

    Make the Pesto Sauce

    In a food processor, combine basil, pine nuts, garlic, and salt. Pulse until finely chopped. Slowly add olive oil while processing until smooth. Adjust seasoning with salt and pepper as needed.

    Roll Out the Pasta

    After resting, divide the dough into four pieces. Roll out one piece at a time on a floured surface to about 1/16-inch thickness. Cut into squares, about 3 inches each.

    Fill and Shape Ravioli

    Place a teaspoon of cheese filling in the center of each square. Moisten the edges with water, fold the dough over to create a triangle, and press to seal. Ensure there are no air pockets. Repeat with remaining dough and filling.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 4-5 minutes or until they float to the surface. Remove with a slotted spoon.

    Serve

    Toss the cooked ravioli with the pesto sauce and serve immediately, garnished with additional parmesan cheese and fresh basil.
