Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Set aside in the refrigerator.

Separate the Eggs
Carefully separate the egg yolks from the whites. In a bowl, whisk the egg yolks with the granulated sugar until pale and creamy.

Combine Chocolate and Yolks
Add the melted chocolate to the egg yolk mixture and mix until well combined.

Fold Ingredients
Gently fold the whipped cream into the chocolate mixture, followed by the beaten egg whites. Be careful not to deflate the mixture.

Chill the Mousse
Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours, until set.

Serve
Serve chilled, optionally garnished with whipped cream or chocolate shavings.
