    Prepare the Filling

    In a skillet over medium heat, heat olive oil. Add chopped onion and minced garlic, and sauté until translucent. Add shrimp and cook until pink and cooked through. Stir in cilantro, lime juice, salt, and pepper. Remove from heat and let cool slightly.

    Make the Cheese Mixture

    In a mixing bowl, combine cheddar cheese, Monterey Jack cheese, and softened cream cheese. Mix until well combined.

    Assemble the Enchiladas

    Preheat oven to 375°F (190°C). Take a corn tortilla, spread a spoonful of the shrimp mixture and a spoonful of cheese mixture in the center, then roll it up tightly. Place seam side down in a greased baking dish. Repeat with remaining tortillas.

    Add Sauce and Bake

    Pour red enchilada sauce over the rolled tortillas. Sprinkle any remaining cheese on top. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.

    Serve

    Remove from oven and let cool for a few minutes. Serve hot with guacamole salad on the side.
