    Prepare the Ingredients

    Start by flattening the pork loin or chicken breast pieces to about 1/2 inch thickness. You can use a meat mallet or rolling pin. Season both sides with salt and black pepper.

    Set Up the Breading Station

    In one dish, place the all-purpose flour. In a second dish, beat the eggs. In a third dish, mix the bread crumbs, grated Parmesan cheese, dried oregano, and dried thyme.

    Bread the Schnitzels

    Dredge each piece of meat first in the flour, shaking off the excess. Then dip it in the beaten eggs, and finally coat it in the breadcrumb mixture, pressing gently to adhere.

    Fry the Schnitzels

    In a large skillet, heat the olive oil or vegetable oil over medium-high heat. Once hot, add the breaded schnitzels in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and cooked through.

    Drain and Serve

    Once cooked, transfer the schnitzels to a paper towel-lined plate to drain excess oil. Serve hot with lemon wedges and your choice of side dishes.
