Lemon Meringue Pie

Method

Preparation

  1. 1

    Make the Crust

Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom and sides of a 9-inch pie pan. Bake for 10 minutes, then set aside to cool.

  2. 2

    Prepare the Lemon Filling

In a saucepan, mix sugar, flour, lemon juice, lemon zest, and egg yolks over medium heat. Stir constantly until thickened, about 5-7 minutes. Pour the mixture into the cooled crust.

  3. 3

    Make the Meringue

In a clean bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and continue beating until stiff peaks form. Spread the meringue over the lemon filling, sealing the edges.

  4. 4

    Bake the Pie

Bake the pie in the oven for 10-15 minutes, or until the meringue is golden brown. Remove and let cool.

  5. 5

    Prepare the Chantilly Cream

In a bowl, whip the heavy cream and powdered sugar until soft peaks form.

  6. 6

    Serve

Slice the pie, sprinkle crushed pistachios on top, and serve with a dollop of chantilly cream.
