    Prepare the Crust

    Preheat your oven to 180°C (350°F). In a bowl, combine graham cracker crumbs and melted butter. Mix well and press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add sour cream, eggs, vanilla extract, and lemon juice. Mix until well combined and creamy.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.

    Chill

    Remove from the oven and let the cheesecake cool to room temperature. Then refrigerate for at least 4 hours or overnight for best results.

    Once chilled, top the cheesecake with raspberry jam and sliced strawberries before serving.
