    In a large pot, melt the butter over medium heat. Add the diced onion, red bell pepper, and minced garlic. Sauté for 5-7 minutes, until the vegetables are tender and the onion is translucent.

    Stir in the corn kernels, diced potatoes, vegetable broth, cayenne pepper, smoked paprika, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.

    Once the potatoes are cooked, stir in the heavy cream and allow the chowder to heat through for another 5 minutes.

Seafood Addition
