Preparation

Dough Preparation

1. Activate Yeast

In a small bowl, combine warm water (1 cup) and granulated sugar (1 tablespoon). Sprinkle the active dry yeast (1 tablespoon) over the water and let it sit for about 5-10 minutes until it becomes foamy.

2. Mix Dough

In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 teaspoon). Make a well in the center and add the melted butter (2 tablespoons) and the foamy yeast mixture. Stir until a dough starts to form.

3. Knead Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.

Shaping and Boiling

4. Preheat Oven

Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.

5. Shape Pretzel Bites

Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into small pieces (about 1-inch each) and roll each piece into a ball.

6. Prepare Baking Soda Bath

In a large pot, bring the water (10 cups) to a boil. Once boiling, add the baking soda (1 cup) carefully to avoid splatter.

7. Boil Pretzel Bites

Drop the pretzel bites into the boiling baking soda bath in batches, cooking for about 30 seconds each. Remove with a slotted spoon and place them on the prepared baking sheet.

Baking and Finishing

8. Top with Butter and Salt

Brush the boiled pretzel bites with melted butter (4 tablespoons) and sprinkle with coarse sea salt (1 tablespoon).

9. Bake

Bake in the preheated oven for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly before serving.
