Prepare Rockfish Bites

Cut the Fish
Cut the rockfish fillets into bite-sized pieces, about 1-2 inches each.

Prepare the Breading
In a mixing bowl, combine the all-purpose flour, cornmeal, salt, black pepper, paprika, and garlic powder.

Bread the Fish
Dip each piece of rockfish into the egg mixture, then coat it with the breading mixture. Ensure each piece is evenly coated.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until hot (approximately 350°F or 175°C).

Fry the Fish
Carefully add the breaded rockfish pieces into the hot oil. Fry in batches, without overcrowding, for about 3-4 minutes on each side or until golden brown.

Drain the Fish
Once fried, remove the rockfish bites and place them on a paper towel-lined plate to drain excess oil.

Mix the Drizzle Ingredients
In a small bowl, combine the mayonnaise, chipotle in adobo sauce, lime juice, honey, and salt.

Blend until Smooth
Use a whisk or fork to mix thoroughly until the drizzle is smooth and well-combined.
Serve

Plate the Rockfish Bites
Serve the hot rockfish bites on a platter.

Drizzle the spicy chipotle sauce over the fried rockfish bites before serving.
