    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and carrots. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Garlic

    Stir in the minced garlic and cook for an additional minute until fragrant.

Building the Soup

    Incorporate Tomatoes and Stock

    Add the canned diced tomatoes, crab stock, Old Bay seasoning, and bay leaves to the pot. Stir well to combine.

    Add Potatoes and Bell Pepper

    Add the diced potatoes and green bell pepper to the pot. Bring the mixture to a boil.

    Simmer the Soup

    Reduce heat to low and let the soup simmer for about 20-25 minutes, or until the potatoes are tender.

Finishing Touches

    Add Corn and Crab Meat

    Stir in the frozen corn and the fresh crab meat, gently folding the crab into the soup. Let it cook for another 5 minutes.

    Season and Garnish

    Taste the soup and adjust seasoning with salt and pepper if needed. Remove bay leaves before serving. Garnish with chopped parsley.
