Pasta Preparation

    Cook the Pasta

    In a large pot, bring water to a boil. Add 1 tsp of salt to the water. Stir in 2 cups of elbow macaroni and cook according to package instructions until al dente, usually about 8-10 minutes. Drain the pasta and set aside.

Cheese Sauce Preparation

    Make the Roux

    In the same pot, melt 4 tbs of butter over medium heat. Once melted, whisk in 1 tbs of all-purpose flour and cook for about 1-2 minutes, stirring constantly until it turns a light golden color.

    Prepare the Sauce

    Gradually whisk in 2 cups of milk to the roux. Continue whisking until the mixture thickens, about 5-7 minutes. Make sure there are no lumps.

    Add the Cheeses

    Reduce the heat to low. Stir in 2 cups of shredded cheddar cheese and 4 oz of cream cheese. Mix until fully melted and smooth. Season with 1 tsp of ground black pepper and 1 tsp of paprika. Stir until well combined.

Combine and Serve

    Mix Pasta and Cheese Sauce

    Add the drained macaroni to the cheese sauce, stirring until the pasta is well coated.

    Optional Topping

    If desired, preheat the oven to 350°F (175°C). In a small bowl, mix 1 cup of breadcrumbs with 1 tbs of grated Parmesan cheese. Sprinkle the mixture over the macaroni and cheese. Bake for 15-20 minutes until the top is golden and crispy.

    Garnish and Serve

    Remove from the oven, sprinkle with chopped parsley, if using, and serve warm.
