Method

Preparation of Shrimp

  1. 1

Rinse the jumbo shrimp under cold water and pat them dry with paper towels.

  2. 2

Season the shrimp with salt and black pepper, ensuring they are evenly coated.

Breading the Shrimp

  1. 3

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.

  2. 4

Dredge each seasoned shrimp in flour, shaking off the excess.

  3. 5

Dip the floured shrimp into the beaten eggs, allowing any excess to drip off.

  4. 6

Coat the shrimp in panko breadcrumbs, pressing lightly to adhere.

Frying the Shrimp

  1. 7

In a large skillet, heat the cooking oil over medium-high heat until it shimmers.

  2. 8

Carefully add the breaded shrimp in batches, making sure not to overcrowd the pan.

  3. 9

Fry the shrimp for about 2-3 minutes on each side or until golden brown and cooked through.

  4. 10

Remove the shrimp from the skillet and place them on a paper towel-lined plate to drain excess oil.

Making the Sweet Chili Sauce

  1. 11

In a small bowl, combine the sweet chili sauce and lime juice, mixing well.

Serving

  1. 12

Arrange the fried shrimp on a serving platter and drizzle or serve alongside the sweet chili sauce.

  2. 13

Garnish with chopped cilantro before serving.
