Preparing the Chipotle Sauce

Make the Sauce
In a small bowl, combine mayonnaise, chopped chipotle peppers, lime juice, and garlic powder. Mix well until smooth. Set aside.
Preparing the Fried Rockfish

Prepare the Breading
In a shallow bowl, whisk together the flour, cornmeal, salt, black pepper, and cayenne pepper.

Coat the Fish
Dip each rockfish fillet into the egg wash, allowing excess to drip off, then dredge in the breading mixture until well coated.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until hot.

Fry the Fish
Carefully place the coated rockfish fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Tacos

Prepare the Toppings
Shred the lettuce, dice the tomato, and slice the onion.

Warm the Tortillas
In a dry skillet, warm the corn tortillas for about 30 seconds on each side until pliable.

On each tortilla, place a piece of fried rockfish, add lettuce, tomato, onion, and a drizzle of the chipotle sauce.
