Pretzel Dough

Method

Pretzel Dough

  1. 1

    Prepare the Yeast

In a mixing bowl, combine warm water (1.5 cups) with granulated sugar (1 tbsp) and active dry yeast (2 tsp). Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix the Dough

In a large bowl, combine all-purpose flour (4 cups) and salt (1 tbsp). Once the yeast mixture is frothy, add it to the flour mixture. Stir until it forms a dough.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.

  4. 4

    Shape the Pretzels

After the dough has risen, preheat the oven to 450°F (230°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.

  5. 5

    Boil the Pretzels

In a large pot, bring 10 cups of water to a boil. Add baking soda (0.5 cups) to the boiling water. Carefully drop the pretzels into the boiling water, one at a time, for about 30 seconds. Remove them with a slotted spoon and place them on a baking sheet.

  6. 6

    Egg Wash

Beat the egg (1 large) in a small bowl and brush it over each pretzel.

  7. 7

    Bake the Pretzels

Bake the pretzels in the preheated oven for about 12-15 minutes, or until they are golden brown.

Crab Dip

  1. 8

    Make the Crab Dip

In a mixing bowl, combine cream cheese (8 oz), mayonnaise (0.5 cups), Dijon mustard (1 tbsp), Old Bay seasoning (1 tsp), chopped green onions (2 tbsp), salt (0.5 tsp), and black pepper (0.25 tsp). Mix until smooth and well combined.

  2. 9

    Add Crab Meat

Gently fold in the cooked and shredded crab meat (8 oz) into the cream cheese mixture until evenly distributed.

Assembly

  1. 10

    Top the Pretzels

Once the pretzels have baked and are still warm, spread a generous amount of crab dip on top of each pretzel.

  2. 11

    Add Cheddar Cheese

Sprinkle shredded cheddar cheese (1 cup) over the crab dip on each pretzel.

  3. 12

    Final Bake

Return the pretzels to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
