Prepare the Burger Patties

In a large bowl, combine the ground beef, Cajun seasoning, salt, and black pepper. Mix until well combined, but do not overwork the meat.

Divide the beef mixture into four equal portions and shape each into a patty about ¾ inch thick. Make a slight indentation in the center of each patty to prevent it from puffing up while cooking.
Cook the Burger Patties

Flip the patties and cook for an additional 3-4 minutes, or until they reach an internal temperature of 160°F (71°C) for medium doneness.

During the last minute of cooking, sprinkle blue cheese crumbles on top of each patty and close the lid (if using a grill) to melt the cheese.
Assemble the Burgers

Toast the burger buns lightly on the grill or in a toaster.

Spread mayonnaise and hot sauce (to taste) on the bottom half of each bun.

Place a lettuce leaf on each bun, followed by the Cajun blue patty, tomato slices, and red onion slices.

Top with the other half of the bun and serve immediately.
