Method

Cooking Pasta

1

Boil Water

Fill a large pot with water, add a pinch of salt, and bring it to a boil over high heat.

2

Cook Spaghetti

Once the water is boiling, add the spaghetti and cook according to the package instructions until al dente, usually around 8-10 minutes.

3

Reserve Pasta Water

Before draining, reserve about 1 cup of the pasta water. Then drain the spaghetti in a colander.

Preparing Sauce

4

Cook Pancetta

In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

5

Mix Eggs and Cheese

In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.

Combining Ingredients

6

Combine Pasta and Sauce

Add the hot drained spaghetti directly to the skillet with the cooked pancetta. Toss to combine.

7

Add Egg Mixture

Quickly pour the egg and cheese mixture over the spaghetti and toss vigorously. The heat from the pasta will cook the eggs and create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

8

Season

Taste and adjust seasoning with salt and more black pepper if needed.

Serving

9

Plate the Dish

Serve the spaghetti carbonara immediately, garnished with chopped parsley and extra Parmesan cheese if desired.
