Cooking Pasta

Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve about 1 cup of pasta water, then drain the spaghetti.
Preparing the Sauce

Cook the Pancetta
In a large skillet over medium heat, add the pancetta. Cook until crispy, about 5-7 minutes. Remove from heat and set aside, keeping the drippings in the skillet.

Mix the Egg and Cheese
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combine Pasta and Sauce
Add the drained spaghetti to the skillet with the pancetta drippings. Quickly pour the egg and cheese mixture over the hot pasta, tossing vigorously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Season and Serve
Taste and season with salt if necessary. Serve immediately, garnished with fresh parsley if desired.
