Base Preparation

    Heat the Milk and Cream

    In a saucepan, combine the whole milk and heavy cream. Heat over medium heat until steaming, but do not allow it to boil.

    Whisk Sugar and Egg Yolks

    In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and slightly thickened.

    Combine Mixtures

    Slowly pour the hot milk and cream mixture into the egg yolk mixture while whisking constantly to temper the eggs.

    Cook the Base

    Return the combined mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 5-7 minutes).

    Add Vanilla

    Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature, then refrigerate until chilled.

Flavoring the Gelato

    Decide which flavor variation you would like to make: chocolate, strawberry, pistachio, or coffee.

    Incorporate Flavoring

    For chocolate gelato, whisk in cocoa powder until fully dissolved. For strawberry, fold in pureed strawberries. For pistachio, stir in chopped pistachios. For coffee, dissolve instant coffee granules in a small amount of warm water and add to the mixture.

Churning and Freezing

    Churn the Mixture

    Pour the flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato to a lidded container and freeze for at least 4 hours or until firm.
