Preparing the Marinara Sauce

Combine Ingredients
Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar to the saucepan. Stir well to combine.

Simmer Sauce
Bring the sauce to a simmer. Reduce the heat to low and let it cook for about 20 minutes, stirring occasionally.

Finish Sauce
Once the sauce has thickened, turn off the heat and stir in fresh basil leaves. Set aside to cool slightly.
Preparing the Calamari

Prepare the Breading
In a mixing bowl, combine flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Coat Calamari
In another bowl, whisk the eggs and buttermilk together. Dip the calamari rings into the egg mixture, then coat them in the flour mixture, shaking off excess.

Heat Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry Calamari
Carefully add the breaded calamari rings to the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes until golden brown.

Drain and Serve
Using a slotted spoon, remove the fried calamari and place them on a paper towel-lined plate to drain excess oil. Serve hot with marinara sauce.
