1. Prepare the Chicken
Heat 2 tablespoons of olive oil in a skillet over medium heat. Season chicken breasts with salt, pepper, and sumac. Cook for 6-7 minutes on each side or until fully cooked. Remove and let it rest before slicing.
2. Sauté the Onions
In the same skillet, add another 2 tablespoons of olive oil and sliced onions. Sauté until onions are soft and caramelized, about 5-7 minutes.
3. Make the Cucumber Salad
Dice cucumber and tomato, and chop parsley. In a bowl, combine cucumber, tomato, parsley, lemon juice, salt, and pepper. Toss to mix well.
4. Assemble the Wraps
Place some sautéed onions and sliced chicken on a piece of pita bread. Top with cucumber salad, roll it up, and serve immediately.
