Prep the Vegetables
Wash and peel the sweet potatoes, then cut them into thin strips. Slice the bell peppers and red onion into thin strips. Remove the seeds and stems from the poblano peppers, then slice them into strips.

Season the Vegetables
In a large mixing bowl, combine the sweet potatoes, bell peppers, red onion, and poblano peppers. Drizzle with olive oil and sprinkle with cumin, paprika, salt, and black pepper. Toss to coat the vegetables evenly.

Char the Vegetables
Preheat your grill or grill pan over medium-high heat. Once hot, add the seasoned vegetable mixture. Cook for about 10-15 minutes, turning occasionally until the sweet potatoes are tender and slightly charred.

Prepare the Tortillas
Warm the tortillas on the grill for about 30 seconds on each side or until pliable.

Assemble the Fajitas
To serve, place a generous portion of the charbroiled sweet potato and vegetable mixture onto each tortilla. Top with pico de gallo. Roll up the tortillas to enjoy your Tapatia!
