    Dice the onion and poblano pepper. Mince the garlic cloves.

    Sauté the Aromatics

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and poblano pepper. Sauté for about 5-7 minutes until the onions are translucent.

    Add Garlic

    Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.

    Incorporate Achiote

    Stir in the achiote paste, mixing well with the sautéed vegetables to release its flavor.

    Add the red rice to the skillet, stirring to coat the rice with the vegetable mixture.

    Pour in the vegetable broth and season with salt and black pepper to taste. Bring to a boil.

    Once boiling, reduce the heat to low, cover the skillet, and let simmer for 25-30 minutes, or until the rice is tender and liquid is absorbed.
