    Prep the Vegetables

    Wash the poblano and bell peppers under running water. Remove the stems and seeds from the poblanos and slice them into strips. Slice the bell peppers in a similar fashion. Peel the onion and slice it into thin strips.

Cooking

    Grill the Vegetables

    Heat a large skillet or griddle (a la plancha) over medium-high heat. Add the olive oil and allow it to heat up. Once hot, add the sliced poblanos, bell peppers, and onions to the skillet.

    Season the Vegetables

    Sprinkle the Mexican oregano, salt, and black pepper over the vegetables. Stir well to ensure even coating.

    Cook Until Tender

    Cook the vegetables for about 10-12 minutes, stirring occasionally, until they are tender and slightly charred.

    Add Chuy Oust

    Once the vegetables are cooked, drizzle the Chuy Oust (or your chosen hot sauce) over them and toss to combine. Cook for an additional 1-2 minutes to let the flavors meld.

Serving

    Plate and Serve

    Remove from heat and transfer the grilled poblano rajas to a serving dish. Enjoy warm as a side or as a filling for tacos or burritos.
