Method

Cheese Dip Preparation

  1. 1

    Melt the Cheeses

In a medium saucepan over medium heat, combine the Velveeta cheese, cream cheese, and milk. Stir frequently until the cheeses are completely melted and smooth.

  2. 2

    Add Flavorings

Stir in the diced tomatoes with green chilies, chili powder, garlic powder, onion powder, ground cumin, and salt. Mix well until all ingredients are combined.

  3. 3

    Finish with Cilantro

If using, mix in the fresh cilantro just before serving for a burst of flavor.

Pico de Gallo Preparation

  1. 4

    Prepare the Ingredients

In a bowl, combine the diced tomatoes, red onion, jalapeño, and chopped cilantro.

  2. 5

    Add Lime and Season

Drizzle lime juice over the mixture and season with salt to taste. Toss everything together until well combined.

Tortilla Chips Preparation

  1. 6

    Cut and Fry Tortillas

Cut the corn tortillas into triangles. Heat the vegetable oil in a deep frying pan over medium-high heat. Fry the tortilla triangles in batches until they are golden and crispy, about 2-3 minutes per batch.

  2. 7

    Season the Chips

Remove the fried chips from the oil and drain on paper towels. While still hot, sprinkle with chili powder and salt to taste.

Optional Protein Preparation

  1. 8

    Cook the Protein

If using chorizo or ground beef, cook in a skillet over medium heat until browned and cooked through. Drain any excess fat and set aside.
