Preparing the Sweet Potatoes

Marinate Sweet Potatoes
In a mixing bowl, combine olive oil, lime juice, cumin, paprika, chili powder, salt, and black pepper. Add the sweet potatoes and toss to coat well. Let marinate for at least 30 minutes.

Charbroil Sweet Potatoes
Preheat your grill or grill pan on medium-high heat. Once hot, place the marinated sweet potatoes on the grill. Cook for about 5-7 minutes on each side until they are tender and have nice grill marks. Remove from heat and set aside.
Cooking the Vegetables

Sauté Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add bell peppers and red onion, and sauté for about 5 minutes until they start to soften.

Prepare Poblano Rajas
Slice the poblano peppers into strips and add them to the skillet. Season with salt and cook for an additional 5 minutes, stirring occasionally until they are tender and slightly charred.
Assembling the Fajitas

Serve
On a plate, arrange the charbroiled sweet potatoes over the sautéed vegetables. Top with fresh cilantro, sliced avocado, and serve with lime wedges and sour cream on the side.
