    Prepare the Vegetables

    Dice the poblano pepper and onion finely. Mince the garlic cloves.

    Rinse the Rice

    Rinse the red rice under cold water until the water runs clear. Drain well.

Cooking

    Sauté Vegetables

    In a medium pot, heat the olive oil over medium heat. Add the diced poblano pepper and onion and sauté for about 5 minutes, until softened. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Add Spices

    Stir in the achiote powder, salt, and black pepper, mixing well to coat the vegetables.

    Cook the Rice

    Add the rinsed red rice to the pot and stir for 1-2 minutes to toast slightly. Pour in the vegetable broth and bring to a boil.

    Simmer

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the rice is tender and the liquid is absorbed.

    Fluff and Serve

    Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
