Guacamole Preparation

    Prepare the Ingredients

    Dice the jalapeno (remove seeds for less heat), mince the garlic, finely chop the red onion, and roughly chop the cilantro.

    Mash the Avocados

    Cut the Haas avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash the avocado with a fork until creamy but still chunky.

    Combine Flavors

    Add the diced jalapeno, minced garlic, chopped red onion, lime juice (squeezed from the lime), and chopped cilantro into the mashed avocado. Mix well.

    Add salt to taste and mix again until everything is well combined.

Toppings Preparation

    Prepare Radishes

    Thinly slice the radishes and place them in a bowl with a pinch of salt. Let them sit for at least 10 minutes to pickle slightly.

    Add Queso Cotija

    Crumble the queso cotija into small pieces to be used as a topping for the guacamole.

    Preheat the oven to 350°F (175°C). Cut corn tortillas into triangles.

    In a bowl, toss the tortilla triangles with olive oil, chili powder, and a pinch of salt until evenly coated. Spread them in a single layer on a baking sheet.

    Bake the Chips

    Bake in the oven for about 10-15 minutes or until crispy and golden brown, turning halfway through.
