Marinade Preparation

    Prepare the marinade

    In a bowl, mix together chipotle adobo sauce, minced garlic, agave syrup, olive oil, lime juice, and salt.

    Marinate the shrimp

    Add the shrimp to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

    Prepare the vegetables

    Slice the poblano peppers, onion, and bell peppers into strips. Heat olive oil in a skillet over medium heat, then sauté the vegetables until tender and slightly charred, about 5-7 minutes.

Cooking the Shrimp

    Grill the shrimp

    Preheat a grill or plancha over medium-high heat. Remove the shrimp from the marinade and grill for about 2-3 minutes on each side until they are pink and opaque.

Assembling the Fajitas

    Warm the tortillas

    While the shrimp are grilling, warm the tortillas on the grill for about 30 seconds on each side.

    Place the grilled shrimp and sautéed vegetables on each tortilla. Top with sour cream and fresh cilantro. Serve with lime wedges on the side.
